Chef Spencer joins the Twelve Days of Christmas with his Cornish Game Hen!
Ingredients:
1 Cornish Game Hen
Rosemary sprig
Thyme sprig
2 Tablespoons of butter
Salt & Pepper
2 Tablespoons of vegetable oil
Cranberry Sauce:
2 bags of fresh cranberries
Zest & juice of 1 orange
2 cups of white grape juice
White wine
1 cup of sugar
Preheat oven to 350 F
Salt and pepper the bird, then butter it.
Sear the bird on its top, then sear the bottom.
Roast for 20 minutes, and begin checking the temperature of the bird. Remove when the thickest part of the meat hits 165 F.
Cranberry sauce:
Combine all ingredients in a medium saucepan and cook over medium heat until jellied.
