The farm to table movement is not a new one. Though it can be traced back to the early 1900s, the movement seemed to increase in popularity in the 1960s and 70s when foodies wanted to see fresh ingredients in their food. With the parallel rise in the fitness industry and more and more Americans working to take better care of their bodies, farm to table is growing strong and it is assumed to be here to stay.
What is farm to table?
The farm to table movement grew as restaurants started sourcing their ingredients from local farms, and often directly from the farmer. This approach eliminates the need for a middle man and ensures that ingredients are as fresh as possible. Most traditional restaurants across the United States source their produce from other parts of the country or around the world, based on prices or favorite suppliers. Though there can be a need for this strategy in certain restaurant segments, these ingredients are shipped long distances and often are picked over or start to ripen before they arrive at their destination. This often required the shippers to freeze the products before sending them on their journey, and the freezing process can leach the taste and freshness from the product long before it arrives.
With farm to fork or farm to table, food is sourced from local farms and is picked right at the peak of freshness. This allows the food to literally burst with flavor and keep the rich vitamin content that foodies love. Because the produce is usually very flavorful on its own, less is needed in the way of sauces and spices.
A’BriTin Catering’s venture into the world of farm to table
The concept of farm to fork doesn’t stop just at restaurants. “We were receiving feedback from our clients that they wanted a farm to table option and not just our traditional line. At the time, we felt we were unable to deliver and we realized that we were missing a critical niche in the wedding and corporate event catering space,” shared Katie Garner, General Manager for A’BriTin Catering & Hospitality. “So, we got our team together and we white-boarded how we could solve the problem. We realized that with the vendors we already had relationships with, it wouldn’t be as hard as we expected. Before long, we knew what we needed to do and our Apples 2 Apples Catering brand was born.”
With the Apples 2 Apples line, we offer an ethical farm to table catering concept that uses only the freshest of ingredients sourced from local farms across Minnesota and Wisconsin. Our menu offers organic, grass-fed, free-range, and sustainable options, served in an eco-friendly manner. We also specialize in serving those with dietary restrictions such as gluten and dairy intolerances, as well as those with vegetarian or vegan preferences.
Making farm to table a reality in the catering business
Locally sourced fresh ingredients not only creates a better flavor for the dish, but it is also great for the local economy. “We started partnering with Chad at Footjoy Brewfarm in 2017, but I had actually worked with him in a past life about 12 years ago,” shared A’BriTin’s Executive Chef Andrew Garner. “Chad’s vegetables are so unique. He doesn’t just grow cucumbers. He’ll grow these heirloom varieties that no one has ever heard of, and quite frankly, his vegetables and other produce are among the best in the state.”
Footjoy Farms is well-known across the state of Minnesota, head chefs, and foodies alike. Many restaurants in downtown Minneapolis use produce from Footjoy Farms or DragSmith Farms because “the quality just can’t be surpassed,” stated Chef Garner.
Roberto Morúa, Head Chef for Apples 2 Apples indicated that Footjoy Farm’s “tomatoes are absolutely amazing. They taste so good and our clients love all of our tomato dishes.”
