As we indicated in August with our first employee spotlight article, at A’BriTin Catering & Hospitality, our mission is to provide a meaningful, trusting, and lasting relationship with our customers. And this is because we believe strongly that our entire team of caterers, chefs, sales professionals, marketers, and more, are family. We want our important customers to feel like family too. It is for this reason, that we are taking advantage of the opportunity to enter month two of our tradition to take time out of our day to recognize at least one of our employees, publicly. We continue to be so proud of the amazing people that we have in our organization – each and every team member is invested and personally committed to ensuring our customers have an event to remember.
This month, we are focusing on Will Gibson, one of our very own sous chefs. Will plays an incredibly important role in the A’BriTin kitchens by providing direct support to our executive chef, Andrew Garner. Will joined A’BriTin Catering & Hospitality in August 2017.
“When I was a kid, my younger brother and I took turns making dinner. Mondays and Wednesdays were my nights, and Tuesdays and Thursdays were his,” Will shared as he reflected on where his kitchen experiences began. “I loved to bake with my mom. We made cookies and cupcakes all the time. But as time went on, I was introduced to cooking and I enjoyed the flexibility it offered over baking. With baking, you need to be so specific and measured. But with cooking, you can take a recipe and add a bit of this and that to really make it your own.”
We all have our menu favorites
When you work for a catering company, you often get the opportunity to sample items off of the menu. Not only if this a great employee benefit, but it makes it easier for our staff to provide personal recommendations to clients when they have something on the menu that they really love. “Maybe it isn’t all that original of a choice, but from the This Little Piggy Catering, I absolutely love the whole roast pig. It’s our specialty and whether you order it pre-cut or ready to carve, it is absolutely amazing,” Will shared.
“For Distinctive Catering, I really enjoy the beef short ribs. The red wine, cherry, and rosemary au jus is amazing, and I completely recommend them as an entrée for any of our clients. On our Apples 2 Apples menu, the pork saltimbocca is fantastic. I love the saltiness of the prosciutto in the sauce!”
When not at work, Will enjoys grilling steaks. He also likes to practice various cooking techniques. But his ultimate favorite is making his mom’s manicotti recipe. “She’s been making it forever and I love it. Now it is my turn to take over the manicotti tradition,” Will reflected.
It all starts with great customer service
Earlier in his career, Will worked for AT&T selling mobile phones. He credits that retail experience to teaching him a foundation of skills all built on customer service. “I actually thought I was going to be an accountant as I have a knack for math,” Will said. “But that isn’t how things moved forward. I’ve found I am really the happiest in a kitchen.”
Will met A’BriTin Catering & Hospitality’s CEO, Seth Brittain, when working for Zaffiro’s Express at the Marcus Cinema in Rosemount, MN. “Seth asked for something that wasn’t on the menu, and I was bummed because we were a bit limited on what we could make. So, then he asked me what I would recommend, and I suggested the buttermilk battered chicken tenders. He loved them and since starting with A’BriTin, I’ve come up with my own version and have made them for Seth from time to time. He still loves them,” Will shared.
